Le uve intere vengono introdotte nella pressa pneumatica ed il mosto che si ottiene dalla loro spremitura soffice, dopo un primo travaso, viene collocato nei serbatoi a temperatura controllata dove rimane fino al suo utilizzo per la produzione dello spumante.
