Whole grapes are put into the pneumatic press for soft pressing and the resulting must is put into controlled temperature fermentation tanks. Alcoholic fermentation takes place here at no more than 18°C in order to enhance the fruity and slightly aromatic fragrance. After a first racking the wine is left to age on the lees with frequent battonage for over 4 months. Then the wine is ready to be bottled
Its structure and character make it perfect for accompanying Mediterranean type first courses, fish baked in paper and roasted white meats.
